Bon Appetit’s Grilled Carrots with Avocado and Mint

I am always searching for untraditional things to put on the grill. Usually I can just think up something or resort to one of my textbooks for inspiration, but for some reason, this time I couldn’t come up with anything. I browsed Bon Appetit’s site, and they surely did not disappoint!

Not only is this recipe not traditional, its very full flavored and super simple to make. I honestly followed it to a T. I think the key here is to SCRUB your carrots, not peel. The recipe says it gives them a better char, which makes absolute sense. Here is the link to this fabulous recipe!
